The class in detail
Tables people photograph before they sit down
A good centrepiece has two jobs: look abundant, and stay out of the way of eye contact and serving dishes. This class teaches the low-profile style we use for banquet work — foam-free, built in a compote or low bowl, flowers at talking height minus twenty centimetres.
We build with the season: dahlias and rudbeckia in autumn, ranunculus and blossom in spring, whatever the market's doing best. You'll also learn the bud-vase multiplier — three stems per vessel down the table makes a NZ$40 spend look like a stylist's invoice.
If you're here for wedding table work, this pairs well with the wedding workshop — the bouquet there, the tables here.
- Runs: One Wednesday evening per month, extra Saturday sessions Nov–Dec
- Guarantee: Free reschedule up to 72 hours before class — details on our refunds page
- Take-home vase included in the ticket price — yours to keep.

Step by step
Three hours, course by course
Table geometry — 20 min
Heights, sightlines, how much table a centrepiece should actually take. This is the part restaurants get wrong constantly.
Mechanics without foam — 25 min
Chicken wire, tape grids and pin frogs. Better for stems, better for the planet, and easier than the foam you fought last Christmas.
Greenery base — 30 min
Build the skeleton first — the shape is decided here, before a single 'real' flower goes in.
Focal & fill — 60 min
Face flowers, secondary flowers, then the floaty bits. Low and loose, not round and tight.
Bud-vase math — 25 min
Quick-fire styling of three mini arrangements to scatter down the table. This is the trick everyone uses at home first.
Style the table — 20 min
We set a full table, place your work, and photograph it properly. Dinner-party flex sorted.
